No-one pretends this is easy. We can know all these warning signs, be hyper-conscious and yet still make genuine mistakes. I recently poisoned a coeliac friend of mine with oven chips. Who knew that those with skins still on are safe, but the ones without are dusted in flour? I would have done, if I had thought to read the label. Potatoes are potatoes, right? The result severely tested our friendship and left her unwell – for weeks.
It’s even tougher in already hard-pressed, busy restaurant kitchens. But in 2023, with the science and technology now available to us, surely there is no excuse for any lack of absolute clarity on menus, or the training of staff. With more of us than ever suffering from food allergies, in particular, we cannot afford to have another tragic case like Owen Carey.
