To prepare the duck, combine the Shaoxing wine, soy sauce, soft brown sugar, five-spice powder, Maldon Chilli Sea Salt, spring onions, ginger, lemongrass, hoisin sauce, and chicken stock in a large pan. Bring to a simmer, add the duck legs and breast, and continue to simmer gently for 1 hour 30 minutes.2. Remove the duck from the pan and pat dry with kitchen paper. Preheat the air fryer to 200°C. Place the duck in the air fryer basket and cook for 10–15 minutes until the skin is crispy and caramelized.3. While the duck is cooking, mix the rice vinegar, Maldon Sea Salt, and caster sugar in a small bowl. Add the julienned carrot and toss to combine. Set aside to lightly pickle.4. Once the duck is cooked, remove it from the air fryer. Slice the duck breast and shred the duck leg meat. Arrange it on a serving platter.5. Warm the Chinese pancakes. Serve the crispy duck alongside the pancakes, hoisin sauce, spring onions, cucumber, and pickled carrots.
