The perfect post-dinner accompaniment.
1 ½ cups granulated sugarPreheat the oven to 180°C.In a 9-inch, cast-iron skillet or round cake pan , melt 2 ounces of the butter over medium heat. Stir in the brown sugar until evenly moistened and remove the pan from the heat. Place 1 whole slice of pineapple in the center of the pan and surround with 7 more slices. Place cherries in the centres of the pineapple slices. Firmly press the pecans into the gaps between the slices.
Bake in the middle of the oven until golden brown and a cake tester inserted in the centre comes out clean, roughly 1 hour to 1 ¼ hours. Place the pan on a wire rack and cool for 10 minutes. Run a small, sharp knife around the edge of the pan to release the cake. Place a large serving plate over the pan and invert onto the plate. Any fruit that sticks to the pan can easily be removed with a small metal spatula and returned to the top of the cake. Serve.
