“To do so, roll the turkey leg away from the crown until the joint ‘pops’ out,” says Nigel Haworth, chef patron atLancashire. “Then use a sharp knife to cut through and remove the legs. The legs will need to be cooked for slightly longer than the crown, so put them in the oven on a baking tray around half an hour before the crown goes in.
