Eating a wide variety of vegetables is crucial for maintaining good health, with Professor Tim Spector recommending at least 30 different plants per week. Each vegetable offers a unique combination of vitamins, minerals, and polyphenols that can benefit the body in various ways, such as improving gut health, reducing inflammation, and lowering the risk of chronic illness and cancer.

Surprisingly, the list also includes the "world's healthiest meat", which boasts higher nutritional value than some fruits and vegetables. In addition, three species of fish feature in the top 10, with the ocean perch ranking third overall due to its high protein and low saturated fat content, followed by flat fish as the second healthiest option.

Beet greens: so delicious, so nutrient dense and you're chopping them off... composting them or throwing them in the garbage and we're just using the beetroot. Meanwhile, the greens are just as great in a salad or for beet-green chips as something like kale. So there's really a lot of waste that is happening here that is completely unnecessary.
