A British traveler discovered the most heavenly side dish in Rome's Cielo rooftop restaurant: crema di patate all'olio d'oliva (olive oil potato cream). This fancy mashed potato, made with fresh boiled potatoes and copious amounts of extra virgin olive oil, is a revelation.

But for me, the main attraction of Italy ’s capital is the food. From pasta, pizza, and gelato, to deep fried artichokes, cornetto pastries, cream-filled maritozzi and coffee, coffee, coffee, there’s something to suit all tastes.
It cannot wait, it cannot be reheated otherwise it loses its most interesting qualities.’ To make the crema di patate all’olio d’oliva, the chef boils the potatoes with the skin on, starting from cold water. Once cooked, they have to be peeled very quickly, and then passed through a potato masher — never a mixer or blender. The mashed potatoes are then mixed with water or milk, before being heated to a boiling point.
