We have all seen or tasted them: a thick corn tortilla filled with ingredients, usually with cheese, to which you can add salsa or other flavors. They are called arepas, gorditas, or pupusas and look the same, but they are not.Arepas originate from Colombia and Venezuela, and although they are made with corn masa, the principle is different in each of these countries, which changes the flavor. For Venezuelan arepas, the flour has to be pre-cooked corn.

“Arepas are the most traditional and representative thing we have and have shared with the world,” said Olivel Villasmil, owner of Todo Pasapalos, a Venezuelan restaurant in Far North Dallas. “For us, it’s an everyday meal, and it’s what unites us as Venezuelans.”Unlike Venezuelan arepas, Colombian arepas use cooked corn dough, made with corn cooked in water and ground with salt. After kneading, it is ready to use. These arepas are cooked on a griddle and almost always have cheese.
