Her new look comes before Upton's final Chicago PD episode, although it is possible that filming for the procedural has wrapped up, hence why she can make such a significant change to her appearance.
Before Halstead left, he promised that he would return, and they could pick up where he and Upton left off. At that point, they were newly married, but it didn't matter to him. He still left for Bolivia. Making things worse, Halstead failed to communicate, leaving his wife clueless and worried. The pair is on the cusp of divorce, but since Spiridakos is leaving Chicago PD anyway, the writers can find a way to fix their marriage, which would be the easiest way to write her out of the series.
