Grapes from Penley vineyards using compost rather than fertiliser and organic rather than synthetic sprays. In 2013, a lot of the things that the winemakers at Rootstock were doing – farming sustainably, wild fermenting white wines on skins, in ceramic egg-shaped vessels, using a lot of whole bunches in reds, not adding sulphur, etc. – felt disruptive, like a counter-culture movement, the rebellious antithesis of mainstream Australian wine.Back then, a lot of mainstream Australian winemakers looked down their noses at the Rootstock crew.
