Here’s her simple method for purging the sand: “Stir in a couple small handfuls of salt in a bowl of water until it’s mostly dissolved. Give your clams an initial rinse in cold water, making sure to scrub off any external debris. Then move the rinsed clams to the saltwater solution and let them hang out while you prep your other ingredients—at least 15 minutes, max 30.
