As the threesome got digging, Barber got in touch with culinary leaders around the world – from Eleven Madison Park’s Daniel Humm to Relae’s Christian Pugliese – to ask if any members of their teams might be interested in joining in. Before long, the Kitchen Farming Project had evolved from a way of keeping Barber’s cooks busy into a global project, with thousands of chefs and non-chefs alike downloading Algiere’s guide everywhere from Colombia to Egypt to the Philippines.
“There’s so much at stake right now when it comes to food,” Barber says emphatically. “With restaurants closed, smaller farms are left incredibly vulnerable. All of the progress that’s been made with the farm-to-table movement over the last 50 years is in jeopardy. What happens in the next few months will determine whether our food supply reverts to basically being controlled by industrial megafarms.
In short, tilling the soil is the most rudimentary way to get on board with Barber’s critically important mission – and anyone with access to a patch of earth can do it. So, what to plant in July?
