It is all but guaranteed to taste fresher, more vibrant and creamier than anything you can find in a bottle at the grocery store. Each component of Caesar salad is important, but the dressing is the main focus. Whether you like your salad heavily sauced or with the dressing on the side, the creamy spread is a crucial element. The best part is that all you have to do is blitz everything in a food processor and it’s done in seconds. Three ingredients contribute to the dressing’s luscious, creamy texture — egg yolk, Dijon mustard and oil.

To serve, simply tear or slice some cold, crisp leaves of romaine lettuce and toss them in a bowl with plenty of Parmesan cheese, the dressing and a smattering of croutons.Stack the leaves on a cutting board and cut them crosswise into 1½-inch slices. Place them in a large mixing bowl.For the dressing, place the egg yolk, mustard, garlic, anchovies, lemon juice, 2 teaspoons salt and 1/2 teaspoon pepper into the bowl of a food processor fitted with a steel blade. Process until smooth.
