Once you go fancy, you can never go back
You might hear the word 'fine dining' and think of two things immediately - expensive and pretentious.
Along with outgoing head chef Rikki Hughes , the pair have created intricate menus that celebrate the very best ingredients that Lancashire has to offer and earlier this year, 263 celebrated their third Rosette, becoming the only eatery in Preston to do so. Oli himself was born in Lancashire and has 17 years of experience in fine dining, working in Michelin Star and Rosette restaurants across the world.
Although 263 is still on its journey to a Michelin star, they have been recommended by the Guide. My experience in Preston felt like the closest I'll get to an experience such as L'Enclume and the best part of it? It's right on my doorstep. The first dish was served in synchronicity with the other guests, so we all felt like we were experiencing the culinary journey together. As written on the menu, it was a Brown Butter Brioche, Lemon Thyme and Fennel Whipped Goats Curd and it was potentially, the best dish of the day.
Next was the most contentious dish - Spilmans Asparagus, Smoked Oyster and Magnolia. This was genuinely like nothing I've ever had before and was one of the reasons why having such a foodie experience is worth its while. This was where most of the food came from and we have to admit, we were defeated by the amount given to us. Two slices of the sirloin arrived on the plate and looking and tasting it, it was beyond any beef you'll have had on a usual Sunday Lunch.
