A top chef in Liverpool encourages perspective after the city misses out on a Michelin star again. While Liverpool's culinary scene continues to flourish, the coveted Michelin star remains elusive.
A renowned chef in Liverpool has urged anyone feeling disgruntled about the city's lack of a Michelin star to adopt a more balanced perspective. The Michelin Guide for Great Britain and Ireland announced its annual awards on Monday, February 10th, in Glasgow, to a gathering of prominent chefs and industry leaders.
While Merseyside has only ever held one Michelin star - previously awarded to Marc Wilkinson's now-closed Fraiche in Oxton - the West Lancashire village of Aughton, nestled between Maghull and Ormskirk, proudly boasts five stars. Mark Birchall's Moor Hall earned its 10th restaurant in the UK to receive three Michelin stars. Tim Allen's sō-lō and The Barn at Moor Hall also hold one star each. One Liverpool restaurant widely considered to be in contention for a Michelin star is '8' by Andrew Sheridan. This establishment, which offers a tasting menu, describes itself as 'one of the UK's most progressive dining experiences' and is listed in the Michelin Guide. Speaking to the ECHO previously, Sheridan expressed his desire for a Michelin star but emphasized that his primary objective is to ensure customer satisfaction and maintain employment for his staff. Reacting to the awards ceremony, Sheridan stated, 'I think people expect that we'll be crying today, but you would have known if you were going to get a Michelin star last week. This is a long-haul game that we’re in. We didn’t get a star but it’s not a case of never getting a star. We can’t decide what Michelin are going to give us'. The restaurant is flourishing, and that is all that truly matters to me.'The chef continued, 'If anybody is spitting their dummy out about it then they need to get a grip. You shouldn’t open a restaurant to get a Michelin star, you should open a restaurant to have a good business and do decent food. That’s how I am; I’m not bitter about it. Well done to everybody who got Michelin stars - it’s really good for them.' Dan McGeorge, who opened Vetch on Hope Street last year, has already garnered two AA Rosettes and a place in the Michelin Guide. Regarding Michelin stars, McGeorge believes Liverpool 'will get one eventually'. He expressed, 'I’m not one to comment on what Michelin are looking for - it changes every year. We didn’t expect to get one because we’ve not been open long enough to get one, so I’m not disappointed. As for anyone else; I’m sure if everyone keeps pushing, in time, they’ll get there. I think a lot of people have really stepped up their game recently and a lot of people have come back into the city from other places where they went to gain more experience. There’s definitely been a massive step up in creativity and the type of food which is coming back into the city. It’s a build-up process and I think everyone knows that. It’s not our main business objective. But I would never say no to it. It’s always about growing and developing as you go along.' Last night's awards ceremony, held at the Kelvingrove Art Gallery and Museum in Glasgow, welcomed 26 new additions to the Michelin star portfolio. Who knows?
