Justin Chapple, Culinary Director of Food and Wine, said the secret to roasting the perfect turkey lies in smothering it in the condiment. He explained: 'I know it sounds crazy, bizarre, it's totally out of the box, but I promise it is the secret to juicy turkey '. And if you're not a fan of the condiment, fear not - he insists it doesn't alter the taste at all. It's incredibly easy and quick to do, requiring nothing more than a turkey and a jar of mayonnaise. You can simply spoon the mayo directly onto the meat, but Justin prefers to use chipotle mayo when he employs this method - though you're free to add any flavourings you fancy. For his version, Justin starts by mixing one tablespoon of freshly chopped thyme with a cup (128g) of mayonnaise, along with zest from an entire lemon, three grated cloves of garlic, and minced chipotle chillie
