Chef Jon Foster-Green, 35, from West Derby, is embarking on a new venture with Sixty Kitchen, merging high-end Chinese cuisine with takeaway convenience. The restaurant aims to bridge the gap between traditional Chinese takeaways and gourmet Chinese food, utilizing an app for orders and ensuring quality by limiting daily food box production.

A man has returned to Merseyside hoping to start a new wave of Chinese restaurants. Jon Foster-Green , 35, from West Derby , is a chef at Sixty Kitchen in Formby. Jon worked in Michelin Star venues and spent time in London and Manchester restaurants. This included spells at Tattu, which serves modern Chinese cuisine in the form of small plates, as well as Australasia, which has Australian dishes influenced by the cuisine of Indonesia and Japan. However, Jon dreamed of a move back to Merseyside.

“You’d eat beige meals during the week with meat and two vegetables but Friday was a treat with a chippy tea. That’s the food I always loved doing as a chef too.” Sixty Kitchen opened in June 2023 with a few unique quirks that have remained to this day. It has a set menu which changes every month. The process to get Chinese food to a customer's doors is entirely in-house, rather than utilising third-party services, with its own app and delivery drivers.
