I believe the most promising method to cool food or drink rapidly would be to put the plate/cup/glass in a box from which air could be pumped. The resulting increased evaporation of water would carry away heat. Advantage: No chemical contamination, no large magnetic fields etc, no need for the pressured storage of gas.
