Chloe shows you how to make a perfect spring time dessert of rhubarb and custard tiramisu.
Gently cooked in golden caster sugar and orange until sweet and tender, the bright pink rhubarb juices are then combined with limoncello to create a zesty liqueur for the sponge fingers to soak up. Then, it's sandwiched between layers of creamy mascarpone, icing sugar, cream and custard and topped with bright green pistachios for a gorgeous look and retro-esque flavour combination.In a saucepan over a medium heat, add the rhubarb, orange zest, and sugar.
Remove from the heat and place stems in a separate bowl, set aside. Add the limoncello to the pink cooking liquid and stir to combine. Set aside.To make the creamy custard mix, in a large bowl add the mascarpone cheese, double cream, custard and icing sugar and whisk until smooth and thick. Set aside.Once you're ready to assemble, soak the sponge fingers in the pink liquor for a few seconds and add to the bottom of your dish. Top with half of the custard mix and spread evenly.
