When I spot overripe bananas languishing in the fruit bowl, my thoughts immediately turn to homemade banana bread . Although it's a difficult bake to mess up, some recipes have proven more successful than others in my quest to perfect this fruity favourite that's become a staple for many. I've experimented with a variety of banana loaf recipes, from sugar-free versions to those with a boozy kick. One thing I've discovered is that there's one type that always comes out on top.
Banana loaves that are more akin to bread than cake often deliver a more balanced flavour and appealing texture. Some will argue that it's only bread if it contains flour, water, yeast, salt, and oil, with a few exceptions, but ever since I found this BBC Good Food recipe, I've never looked back on my banana bread journey. The recipe, by Justine Pattison, is aptly named the 'easiest ever banana cake', and for good reason. Unlike some recipes, oil substitutes butter, eliminating the need to cream the butter or grind it into breadcrumbs with the flour. It's also incredibly adaptable. The banana bread works wonderfully on its own or with additions like nuts, dried fruit, chocolate chunks, and spices, reports the Express. When I baked it recently, I threw in a handful of sultanas, which plumped up beautifully in the oven. They also provide a burst of juiciness when you bite into a slice of the finished loaf. I decided to top the two unbaked loaves (I doubled the recipe to make two) with banana slices, as I had some extra fruit. They baked perfectly into the top of each loaf. As for the sugar, I substituted most of the brown sugar for caster as I only had a quarter of the required amount of brown sugar. Ingredients:- 3 ripe bananas, mashed - 2 eggs- 100g soft brown sugar (or caster sugar)- 100ml vegetable oil- 200g self-raising flour- 1 teaspoon baking powder- 1/2 teaspoon mixed spice- 50g sultanas, chopped nuts, or other additions (optional)Method:1. Preheat your oven to 180C/160C Fan/Gas 4. 2. Grease and line a standard-sized loaf tin.3. In a large mixing bowl, mash the bananas with a fork. Add the eggs, sugar, and oil. Mix well with a fork or whisk until you have a thick, but runny mixture.4. In a separate bowl, sieve the flour, baking powder, and spice. Gradually add this to the wet ingredients, whisking until just combined. Don't overmix.5. If using, stir in the sultanas, nuts, or any other additions.6. Pour the batter into the prepared loaf tin and bake for 40 minutes, or until the cake has risen well and a skewer inserted into the centre comes out clean.7. Allow the loaf to cool in the tin for 10 minutes before turning it out onto a wire rack or a plate. Serve warm or cold in slices - it's perfect with a cuppa.
