For those who aren’t fond of traditional Christmas sweets, this carrot cake is a perfect, healthy replacement over the festive period. With its warming notes of cinnamon and allspice, it evokes the flavour of gingerbread biscuits while being vegan, gluten-free, refined sugar-free and seed oil-free. Decorate with vibrant red currants or delicate orange zest ribbons for a stunning finish.
Line one large baking tin or two smaller tins with parchment paper, or lightly grease. For a single-layer cake, pour all the batter into one medium-sized tin. For a two-tiered cake, divide the batter evenly between two tins to create thinner layers. In a large bowl, mix the coconut sugar, carrot purée and vanilla extract until smooth. Add the light avocado or olive oil and stir to combine.
