Tropical Cafe, a new restaurant in Glasgow's Merchant City, is bringing the bold flavors of the Caribbean to Scotland. Owner Leo Flores, originally from Trinidad, is passionate about sharing the cuisine of his home islands with the city. The restaurant offers authentic dishes, tropical decor, soca music, and warm hospitality, creating a 'flavorful escape into the islands'.

Glasgow recently saw a taste of the bold flavours of the Caribbean arrive in the Merchant City, and the owner and chef behind it are delighted to be bringing the latest food trend to the city.

Leo, who is originally from Trinidad, came to Scotland 33 years ago for his wife and the couple now have two children. So he did, bringing in a top team of Caribbean chefs and launching in the former Apostel site on Bell Street with a menu packed with dishes that some will be recognisable to Scots, while others might not be.Head chef Chin explained they are using ingredients and spices direct from the Caribbean , meaning their flavours are unlike anything you'll find here - with some dishes being Caribbean twists on local favourites.

"You can’t have a kitchen without unity and people together. We have a phrase, when it comes to passion and attitude 'you can taste it in your food'." Leo concurred adding: "What we are adding is the taste and the spice and it's all about the herbs that we use. Our food is authentic. Dishes like Bake and Shark, a dish rated by top chef Andrew Zimmern as the best sandwich he'd ever eaten, and the popular Caribbean take on a pizza are items they hope to serve in future.
