The extra dressing is great for all sorts of things and I'll be making more it!This is an awesome meal. So easy to prepare and flavors pop in your mouth. Very fresh, healthy and light. We loved it!Easy after work recipe with a light spring flavor. The leftovers worked well for lunch the next day! I didn't have mint, it was still great. served it on Mixed spring greens.Fresh, summery salad perfect for a light weeknight dinner. Used arugula instead of watercress.
