We tried the Chorley restaurant bagging national awards and blowing minds
Down a quite Chorley street stands an award winning restaurant that built up its reputation in the town over the last four years.
A decade on, with more knowledge of good food, hospitality and greater understanding of people look for, Gareth secured another job as a manager for a former restaurant- one that resided in the very same building as Encore. "The end goal was to open my own venue and the whole idea was that Chorley doesn't have any kind of refined dining experience- they're all bistro style, or tapas and pub food," Gareth said.
Upstairs provides more of a wow factor with the stunning, rustic yet modern wooden bar, framed perfectly by green plants, golden lights that make the glass bottles twinkle during the night. Bar stools and table dotted around the room provide a glimpse of what the room would look like on a Saturday night- full of friends, families, first dates all huddle around to get close to the beautiful bar.
The flavours are a mystery to pin point but with the helpful guide of Gareth and his team, they revealed that coconut broth is a traditional Thai Tom Yum broth made with contrasting spicy and sour flavours. Flakes of cod that drifted into the broth became marinated in the in coconutty sauce creating a smooth, buttery taste that was incredibly moreish.
