Refreshing and hydrating, cucumbers are the perfect summer vegetable. While it has a number of benefits for the body, such as being rich in minerals and certain vitamins, nutritionist Rhiannon Lambert recommends combining it with other vegetables. In an article published in The Telegraph, the expert explains why.
However, the expert adds, ‘on the whole, they are not as rich in nutrients as other options such as green leafy vegetables or cruciferous vegetables’. She therefore recommends that you don't make up your plates with just cucumbers.
Cucumbers can also be eaten as sticks. You can combine them with homemade hummus for extra protein. Another option? Make a yoghurt sauce with mint and lemon. Cut up some hard-boiled eggs and mix with the cucumber cubes. It's a complete and delicious starter! The important thing is to add more nutritious foods to the cucumber for a healthy, complete meal.
