Collecting sap and creating syrup meets science at UAF where the One Tree Alaska program is working to dial in the details of making this product from Fairbanks.

FAIRBANKS, Alaska - Green-up occurred on May 3, but since April 15 the One Tree Alaska program has been collecting and converting birch sap into syrup, all the while conducting research on their products.

As south facing slopes began producing the much sought-after product, less favorable spots began to flow later in the season. Those include north facing slopes and areas that are less exposed to the warming weather. But the harvest will soon be over and the sap will soon become syrup. As to what happens in a given season, “I will go into the woods and I will tap the trees with all of our tubing and tanks and you know drilling the trees and then I’ll be collecting the sap every day,” Brodie said.

The most important factor of it all relates to the time at which the snow around the base of trees begin to melt away and the soils warm up. This is when the sap can begin to flow.
