Fans of fermented food range from those who hail the perceived health benefits for our gut microbiome to those who enjoy the hipsterish halo from making their own small batch DIY ferments. Read, a former journalist, got into making kimchi for a pop-up restaurant he used to run with his wife. When he realised he was making more kimchi than he could serve or eat, he started selling it to neighbours. Last year, Ocado joined the likes of Wholefoods and Planet Organic, stocking Read’s jars of Kim Kong Kimchi and boosting the number he makes by 20 percent to around 5,000 a month.
Kimchis, along with kefirs and kombuchas, are the best selling fermented foods in Waitrose, says the supermarket’s executive chef, Martin Lee. Searches for recipes for “Kimcheese toasties” onrose 179 per cent from January to February, he adds. “Demand has been driven for a number of reasons, including health – gut health in particular – and taste. Fermentation creates unique flavours as well as well as having positive effects on the gut microbiome”.
“The fruit needs to be fully covered,” he says, before sealing the jar. This is then left to ferment for between two and six days, but needs checking daily for signs of fizzing. He warns: “Be careful when opening it because it can be very fizzy!”It’s ready when you – the maker – decide you like the taste. I try some he made last week, ahead of my visit, which he whisks out of the fridge.
