With a passion for cheese and a knack for creating delicious dishes, it's no surprise that James, 52, has released his new book Cheese just in time for Christmas .

And the best part? We've got three recipes listed below with easy-to-follow instructions so you can whip up some of James' favourite cheesy delights straight from his new book.1. Preheat the oven to 200°C/180°C fan/ gas mark 6. Line a large baking tray with baking parchment. 3. Spread the mustard over the pastry and evenly top with the tomatoes. Sprinkle over the thyme, season with black pepper and brush the edges with the egg yolk. Bake in the oven for 20–25 minutes.Lamb fillet, fig and feta salad Server 4 1. Dry-fry the lamb in a hot frying pan for 10 minutes until crispy, then spoon into a bowl. Fry the baguette slices in the same pan with half the olive oil until golden, then add to the bowl.3.
