The nutritional scientist said mushrooms are 'full of nutrients that you don't get in other plants'
Nutritional scientist Professor Tim Spector has spoken about a ‘superfood’ which he says will drastically reduce the chances of getting dementia. The Professor of Genetic Epidemiology at King's College London and founder of the Zoe health app said that the common food which is frequently used in breakfasts and main evening meals is ‘magical’.
He said: “I love mushrooms and they are more magical than you might realise. Mushrooms are the leading dietary source of an amino acid called ergothioneine , which appears to have important anti-inflammatory mechanisms for humans. Prof Spector explained that they can also be a source of vitamin D - which is vital for staving off dementia. The NHS advocates people take vitamin D during the winter months, and Prof Spector said there was also a hack to make the mushrooms actually have more of it when you come to eat them.
