Leyla Kazim considers new solutions from food waste laws to fridge redesigns.
In the UK, we are wasting over 10 million tonnes of food a year. That's produce that could have been sold, cooked, and enjoyed. Food waste isn’t a new problem, but it’s also not one that’s going away., Leyla Kazim meets the people who have made it their life’s work to find new solutions to this old issue, from dumpster divers to fridge enthusiasts and zero-waste chefs.
“It quickly became a more political project than just living off the food,” he states. He used the pictures of piles of discarded produce to talk about the food system and its failings. “Food waste is persistent and systemic across markets,” says the activist. “My hope, which was slightly naïve, was that politicians might actually want to start doing something about it.”
The business is also about sharing food skills; they run classes to show people how to cook from scratch and use food that is damaged, too big or too small. “A lot of people haven’t got the confidence to cook or use food in the way that perhaps people used to,” she suggests. So, as well as helping reduce waste in their supply chain, it’s important that retailers help their customers reduce household waste. “The key action would be selling loose fruit and veg, simply because they are by far the most wasted items in our homes,” suggests Estelle. “We estimate that if all apples, bananas, potatoes were sold loose, we could reduce household food waste by around 50,000 tonnes a year.
Max shares another: “If you do have spring onions that have roots, or any vegetable for that matter… you can put it in water and it will kind of resuscitate it and bring it back to life.”
