She suggests that a rich, red wine base is key to tantalising the taste buds. On those gloomy, wet evenings, there's nothing quite as satisfying as a steaming bowl of beef stew to fend off the cold. With Mary Berry's expert guidance, you can easily create this soul-warming dish.
Once browned, transfer the meat to a plate. Next, dice the bacon and add it to the pan along with the onion and garlic. Fry these until the bacon begins to brown. In a separate wide-based pan, pour in the wine and bring it to a boil until it reduces by half. Sprinkle flour over the onion mixture in the casserole dish, then pour over the reduced wine, brandy, and half of the stock. Stir this mixture until it thickens and comes to a boil.
